Seilyn's Anaerobic

Same farm, same family, a different idea. Seilyn and Adolfo seal these cherries in tanks to ferment without oxygen before drying, and the result is louder than their Black Honey: wine-like fruit, a heavier body, a coffee that announces itself. The label is Sunrise Blue, named for their farm, Blue Sunrise.
