Seilyn's Black Honey

Seilyn and Adolfo Jimenez Barboza grow this coffee at Blue Sunrise, their farm in the Tarrazú highlands of Costa Rica. It was the first farm we ever visited, and the reason Lost & Found exists. The black honey process leaves most of the fruit on the bean while it dries, which is where the sweetness comes from.
